I prepared this fluffy strawberry mousse for a small dinner gathering last weekend, and my friends nearly devoured it to the last spoonful!

Ingredients

2 cups strawberries
¼ cup sugar
2 cups whipped cream
2-3 tablespoons finely chopped strawberries (garnishing)

Directions

Step-1

Purée the strawberries and sugar in a blender until smooth.

Step-2

Whip the cream with an electric mixer to soft peaks. It will take around 6-8 minutes to achieve that consistency. Be careful to not over whip.

Step-3

Add the strawberry puree to the whipped cream and whisk again for a couple of minutes or until well combined to a soft, fluffy and smooth consistency.

Now scoop the mixture in the desired short glasses and top with some chopped strawberries.

Let it set in the fridge for 3-4 hours to chill before serving.

Tips & Variations

  1. Use ripe, fresh strawberries for the best flavour.
  2. Blend the strawberries and sugar until you achieve a smooth puree. This will ensure a silky texture in your mousse. If you want you can strain the puree through a fine-mesh sieve to eliminate seeds, giving you a smoother mousse.
  3. Make sure the cream is cold when you start whipping it. I always chill the bowl too as whipping cold cream in a frozen bowl makes whipping faster and better.
  4. Whip the cream until soft peaks form before adding the strawberry puree. Be careful not to over-whip, as this can lead to buttery consistency.
  5. Make sure to only whisk the cream to soft peak as that point is easier to fold in the other ingredients. If the cream is over whisked it can very quickly either split or you will get lumps of cream in the mousse. To check if the cream has reached soft peak is if you swirl it with a spoon, it will gently hold the shape.
  6. You can also reserve a bit of strawberry puree to layer in the bottom of the serving glasses or on top of the mousse. A couple of tablespoons in each glass should do the trick.
  7. Allow the mousse to chill in the fridge for at least an hour, or overnight for a firmer set.
